These 0-400 smoked chicken wings are tender on the inside, and crispy on the outside.

0-400 Smoked Wings Ingredients
- Chicken wings (1 pound). I love the Bell & Evans brand. I get mine pre-cut, so the flats and drums are already separated.
- Seasoning (2 tbsp). Just use your favorite seasoning here. I like salt, pepper, and garlic, and also my homemade wings rub.
- Wing sauce (1/2 cup). Again, use your favorite wing sauce here. For this cook, I did one batch in my homemade buffalo sauce, and one in my BBQ sauce.
- Blue cheese dressing (1 cup). You can't have smoked wings without my homemade blue cheese dipping sauce.
0-400 Smoked Wings Recipe Instructions
1. Season the wings

Season your wings liberally. You can also add a tablespoon of baking powder to your rub for extra crispiness.
2. Refrigerate the wings
Toss your wings in the fridge for at least an hour, and up to four hours. This allows the seasoning to get into the meat.
3. Place the wings on your cold smoker

Place the wings on your smoker, cold.
4. Turn on your smoker

Then, set your smoker to 400 degrees, close the lid, and set a timer for 30 minutes.
5. Flip the wings

After 30 minutes, flip the wings, close the lid, and then set another timer for 30 minutes.
6. Sauce the wings

After an hour on your smoker, remove the wings and sauce them. Add them to a large bowl, add your sauce, and mix well.
7. Return the wings to the smoker

Add your sauced wings back on your smoker for another five minutes. This will allow the sauce to adhere to the chicken a little better.
8. Remove wings from the smoker, and enjoy

Remove the wings from the smoker, and serve with my homemade ranch and homemade blue cheese. Enjoy!

These came out fantastic! Definitely not as crispy as fried wings, but a lot healthier.
Thanks, Samantha!
Wouldn’t that depend upon outside temp. Grill slower to 400 then in the summer. Was just wondering if that is a factor ?
Hey Randy, yes that’s a good point—the time is just an estimate, always temp your wings to determine when they’re actually done.
