These grilled steak bites with cowboy butter are out-of-this-world delicious. We're taking a tender New York Strip and searing it up on the flattop. Then we're topping it with an amazing cowboy butter sauce that takes this steak to the next level.

Honestly, this recipe couldn't be simpler. Since we're chopping up the steak into bite-sized pieces ahead of time, it cooks on the grill in a matter of minutes. Then it's just a matter of making the quick sauce and pouring it all over the top. So good!
🛒 WHAT YOU'LL NEED TO MAKE THIS RECIPE

- New York Strip – Use your favorite steak here. I'm going with New York Strip because it's tender but also has a nice bit to it.
- Worcestershire Sauce – To act as a binder for the steak seasoning.
- Steak Seasoning – I'm using this seasoning from Kairos, but use whatever you have, or just salt & pepper if you prefer.
- Butter — I'm using Kerry Gold for the base of the cowboy butter.
- Crushed Red Pepper Flakes – Just a little bit of heat for the butter.
- Dijon Mustard – To give the cowboy butter a tangy kick.
- Garlic Paste – Easy to mix and gives a deep, roasted garlic flavor.
- Lemon Juice – Brightens up the butter sauce and cuts through the richness.
- Chives – Fresh, slightly oniony flavor top it off.
👨🍳 HOW TO MAKE GRILLED STEAK BITES WITH COWBOY BUTTER
1. Prep the Steak

Prep the steak for the grill by first hitting it with a little of the Worcestershire Sauce to act as a binder. Then, season the steak with your steak rub. Finally, you want to cut the steak up into bite-sized pieces for quick grilling.
2. Make the Cowboy Butter

Next heat up your grill on high heat while we make the cowboy butter. In a small bowl, combine the melted butter, dijon mustard, garlic paste, crushed red pepper flakes, and fresh lemon juice. Mix well to combine.
3. Grill the Steak

Cook the steak on your grill or flattop over high heat. This should only take about two minutes per side. The idea is to develop a nice crust without overcooking the steak.
4. Plate the Steak

Remove the steak from the grill and top with the cowboy butter. Finish by adding chives on the top. Serve and enjoy!

Grilled Steak Bites with Cowboy Butter

Ingredients
- 1 New York Strip steak cut into pieces
- 1 tsp Worcestershire sauce binder
- 1 tbsp steak seasoning
For the Cowboy Butter
- 4 tbsp butter melted
- 1 tbsp Dijon mustard
- 1 tsp garlic paste
- 1 tbsp lemon juice
- 1 tbsp chives chopped; for garnish
Instructions
- Season the steak bites with the Worcestershire sauce and steak seasoning, then cut the steak into even bite-sized cubes.
- In a bowl, mix melted butter, Dijon mustard, garlic paste, lemon juice, and crushed red pepper flakes to create cowboy butter.
- Heat a grill or flattop to high heat. Sear steak bites for 2 minutes per side until they have a nice crust.
- Transfer to a plate and drizzle with cowboy butter. Garnish with chopped chives and serve immediately.
