How To Make Smoked Lamb Chops
We're firing up the Traeger for these smoked lamb loin chops, going low and slow at 225 degrees for just over an hour until it hits medium rare, and then finishing it off on the gas grill to get that nice crust.
We're hitting them with our smoked lamb rub to start, and then letting them rest on the counter for 15 minutes to allow the rub to adhere to and seep into the lamb.
Once they've hit 125 internal on the Traeger, we're pulling them off and getting a nice sear and crust on them by finishing them off on our Weber grill for a few minutes each side.
This recipe results in very tender meat that has delicious flavors!
Then, you can serve it with a nice tzatziki sauce or mint jelly, or even eat them without any sauce at all. They're THAT good!
The Ingredients
- Lamb chops. We're using the Kirkland Signature Frenched Lamb Rack from Costco. So good!
- Olive oil. To get the rub to adhere, we're coating the lamb chops with a thin layer of olive oil on all sides.
- Rub seasonings. For this cook, we're going with our homemade lamb rub, which combines paprika, garlic powder, dried thyme, brown sugar, mustard powder, cumin, and salt & pepper. Perfect for smoking lamb chops!
The Directions
1. Place lamb chops on a baking sheet and apply a thin layer of olive oil on all sides. Then, add lamb rub all over. Allow the rub to settle on the lamb for at least 15 minutes on the counter.
2. Preheat your smoker to 225 degrees F with the wood or pellets of your choosing. For this cook, I'm going with cherry pellets since it's what I already had in my Traeger!
3. Insert a digital meat thermometer into the lamb before throwing it on the smoker. You don't want to overcook this lamb! My favorite meat thermometer is the MEATER.
4. Put the lamb chops on your smoker and close the lid.
5. Remove the lamb after it hits 125 internal. For this cook, this took about 65 minutes.
6. Fire up your gas grill and give the lamb chops a nice sear, about 2-3 minutes per side. This is to get a nice crust.
7. Pull them off the grill, and let them rest inside for 10 minutes before slicing into them. ENJOY!

Storage Tips
- To Store. You can store these smoked lamb chops in an airtight container in the fridge for up to 3-4 days. We like to use the leftovers in chopped up in tacos or in a salad!
- To Freeze. While I guess you could technically freeze leftover lamb chops, I definitely don't recommend it! Yuck!
