smoked lamb chops

Ingredients

  • 1 rack lamb chops
  • 1/4 cup seasoning
  • 2 tbsp olive oil

Instructions

  • Place lamb chops on a baking sheet and apply a thin layer of olive oil on all sides. Then, add lamb rub all over. Allow the rub to settle on the lamb for at least 15 minutes on the counter.
  • Preheat your smoker to 225 degrees F with the wood or pellets of your choosing. For this cook, I'm going with cherry pellets!
  • Insert a meat thermometer into the lamb before throwing it on the smoker. You don't want to overcook this lamb!
  • Put the lamb chops on your smoker and close the lid.
  • Remove the lamb after it hits 125 internal. This should take about one hour.
  • Fire up your gas grill and give the lamb chops a nice sear, about 2-3 minutes per side. This is to get a nice crust.
  • Pull them off the grill, and let them rest inside for 10 minutes before slicing into them. ENJOY!
