How To Make Smoked Porterhouse Steak
I mean it when I say this recipe is try one of the easiest steak recipes you can make on your smoker.
First, we're seasoning our porterhouse with our homemade coffee rub.
(Optional: if you have the time, you can also dry-brine your Porterhouse).
Then we're tossing it on the Traeger, letting this smoking technique do its thing.
Then we're going to sear the porterhouse on both sides to develop a nice crust, and allow it 10 minutes resting time.
Serve with a Ceasar salad or your favorite BBQ side dish!
With literally just two ingredients for this smoked porterhouse recipe, it truly does not get any simpler.
The Ingredients
- Porterhouse steak (1.5-2 pounds). Our Porterhouse was 1.5 pounds, which we picked up at a local Fresh Market.
- Dry rub (1/4 cup). We used our homemade coffee rub. You can also try this with our homemade steak seasoning.
The Directions
1. Preheat your smoker to 225F degrees. For your wood chips or pellets, use whichever flavor you like best for this smoking technique. Use a smoke tube for even more smoky flavor.
2. Apply your dry rub to all sides of porterhouse steak. Allow the rub to adhere to the meat for 10 minutes.
3. Put the porterhouse on your grill or smoker. Insert a meat thermometer to monitor the internal temperature, then close the grill.
4. Cook your porterhouse steak to 120F degrees internal (for an eventual medium rare, about 90 minutes), remove it from your smoker, then heat up your gas grill to its highest setting.
5. Sear the porterhouse steak on both sides on the grill or GrillGrates, about 90 seconds each. This will help the steak develop a beautiful crust.
6. Allow 10-15 of resting time for the porterhouse. Then, slice agains the grain, serve with our homemade Peter Luger steak sauce, and ENJOY!
Note: you can optionally serve with a mixture of melted clarified butter, garlic, and Worcestershire sauce, like we did in the above picture!
Cooking Temperature & Time
- Cooking Temperature. We smoked these porterhouse steaks at 225F until they hit an internal temperature of 120F. Then, we transferred them to a ripping hot gas grill for the final 2-3 minutes.
- Cooking Time. These porterhouse steaks took about 90 minutes to reach 120F on our 225F Traeger.
Storage Tips
- To Store. You can store this smoked porterhouse in an airtight container in the fridge for up to 3-4 days. Steak will start to go bad after that.
- To Reheat. You can reheat this porterhouse in a 325F degree oven for 10-15 minutes. Just make sure to cover the pork in foil to prevent it from drying out.
