Ingredients
- 1 steak porterhouse 1.5-2 pounds
- 1/4 cup BBQ rub
Instructions
- Preheat your smoker to 225F degrees. For your wood chips or pellets, use whichever flavor you like best for this smoking technique.
- Apply your dry rub to all sides of porterhouse steak. Allow the rub to adhere to the meat for 10 minutes.
- Put the porterhouse on your grill or smoker. Insert a meat thermometer to monitor the internal temperature, then close the grill.
- Cook your porterhouse steak to 120F degrees internal (for an eventual medium rare, about 90 minutes), remove it from your smoker, then heat up your gas grill to its highest setting.
- Sear the porterhouse steak on both sides on your grill, about 90 seconds each. This will help the steak develop a beautiful crust.
- Allow 10-15 of resting time for the porterhouse. Then, slice agains the grain, and serve.
