HOW TO MAKE SMOKED SWEET POTATOES
WITH MAPLE BOURBON BUTTER
1. Prepare the Potatoes
Prep the potatoes first by washing and scrubbing them, then patting them dry. Pierce them with a fork in a few spots to allow steam to escape when smoking. Apply the olive oil all over, and then season with the salt.
2. Smoke the Potatoes
Smoke the sweet potatoes at 250F for about two to two and a half hours, or until they reach an internal temperature of between 205°F to 212°F. Cooking to this temp makes sure they're nice and soft and the sugars have caramelized.
3. Makes the Maple Bourbon Butter
In a small bowl, mix together the softened butter, maple syrup, bourbon, and chopped pecans and fresh chives. Refrigerate for at least 30 minutes to allow the butter mixture to get firm.
4. Serve & Enjoy
When the potatoes are done, take them off the smoker and let them cool for a few minutes. Slice the potato length-wise and add a nice dollop of the maple butter right on top, letting it melt into the hot potato before serving. Enjoy!
