Smoked Sweet Potatoes with Maple Bourbon Butter

Sweet, smoky, and indulgent! These smoked sweet potatoes are elevated with a luxurious maple bourbon butter, featuring nutty pecans and fresh chives. Perfect as a side dish for BBQ feasts or holiday gatherings.

Ingredients  

Sweet Potatoes

  • 2 sweet potatoes medium
  • 1 tbsp olive oil
  • kosher salt to taste

Maple Bourbon Butter

  • 1/4 cup butter softened
  • 1 tbsp pure maple syrup
  • 1/2 tbsp bourbon
  • 1 tbsp pecans finely chopped
  • 1/2 tbsp chives finely chopped

Instructions

  • Scrub the sweet potatoes and pat them dry. Pierce each potato with a fork. Coat with olive oil and sprinkle with kosher salt.
  • Place the sweet potatoes directly on the smoker grates and smoke them at 250F. Close the lid and smoke for about 2 hours, or until the internal temperature of the sweet potatoes reaches 205F to 212F.
  • While the potatoes are smoking, mix the softened butter, maple syrup, bourbon, pecans, and chives in a small bowl. Refrigerate until firm.
  • Once the sweet potatoes are done, remove them from the smoker. Slice each open lengthwise, fluff the interior, and add a generous slice of the Maple Bourbon Butter on top. Let the butter melt into the hot potato before serving.

Notes

  • Use a meat thermometer. Don't be afraid to temp your potatoes with a meat thermometer. Aim for between 205F to 212F.
  • Microwave to save time. If you want to cut the recipe time by about half, microwave the potatoes for 5 minutes before tossing them onto the smoker.
