Smoked Buffalo Chicken Dip

One of my absolute favorite appetizers to throw on the smoker for a big game is this smoked buffalo chicken dip. I don't know about you, but I'm obsessed with *all things* buffalo chicken. And there's just something about putting together all of the buffalo flavors in dip format that makes this dip irresistible. 

This dip is smoky, creamy, cheesy, and packs a little punch with the Buffalo sauce. Best of all, it all comes together in one cast iron pan that you just pop on your smoker. In less than an hour, you'll have the perfect appetizer for game day. 

🛒 WHAT YOU'LL NEED TO MAKE THIS RECIPE

  • Chicken – I used a rotisserie chicken and shredded it, saving me a lot of time. Of course, you can use baked or smoked chicken if you prefer. 
  • Cream Cheese & Sour Cream – The cream cheese and sour cream make up the creamy base for the dip. 
  • Wings Sauce – I used Frank’s RedHot because there's no better buffalo sauce out there.
  • Ranch Seasoning – I used half a packet of the Hidden Valley Ranch seasoning. 
  • Cheddar & Mozzarella – You can experiment with the cheeses here, but I like the cheddar and mozzarella combo. 
  • Blue Cheese Crumbles – You cannot—I repeat: cannot—have any kind of buffalo chicken dish without using blue cheese. 
  • Chives – For a little pop of color to add on top when we're all done smoking. 

👨‍🍳  HOW TO MAKE SMOKED BUFFALO CHICKEN DIP

1. Prepare the Creamy Base

In a medium-sized bowl, add the chicken, cream cheese, sour cream, mozzarella cheese, cheddar cheese, wing sauce, and Ranch seasoning. Mix well until everything is combined. 

2. Assemble in a Cast Iron Skillet

Transfer the mixture to a small cast iron skillet and spread evenly. Top the mixture with the blue cheese crumbles. 

3. Smoke the Dip

Add the dip to a 300F smoker and smoke it for about 45 minutes, until its melty and bubbly.

4. Garnish & Serve

Remove the dip from the smoker, and top with chopped chives. Serve with pita chips and enjoy.

💡 PRO TIPS FOR MAKING THIS RECIPE

  • Adjust the spice. Next time I make this, I think I'm going to add a little extra buffalo sauce on top after it comes off the smoker. 
  • Green onion works, too. I love garnishing my dips with a little pop of color. Either chives or green onion works well here.

This creamy, smoky, and cheesy Buffalo chicken dip is the ultimate game-day appetizer. Rotisserie chicken makes it effortless, while blue cheese and Buffalo sauce bring bold flavor. Smoked to perfection in a small cast iron skillet, it’s an easy, crowd-pleasing dip.

Ingredients  

  • 1.5 cups chicken breast shredded
  • 6 oz cream cheese softened
  • 1/3 cup sour cream
  • 1/2 cup Buffalo wing sauce
  • 1/2 packet Ranch seasoning mix
  • 3/4 cup cheddar cheese shredded
  • 1/2 cup mozzarella cheese shredded
  • 1/4 cup blue cheese crumbles
  • 2 tbsp chives chopped

Instructions

  • In a bowl, mix together chicken, cream cheese, sour cream, Buffalo sauce, Ranch seasoning, cheddar, and mozzarella.
  • Spread into an 8-inch cast iron skillet and top with blue cheese crumbles.
  • Smoke at 300°F for 45 minutes to 1 hour, until bubbly and golden.
  • Smoke the dip for 15-20 minutes until the cheese is fully melted and bubbling.
  • Garnish with chives and serve hot with pita chips.

Notes
