Roasted Garlic Smoked Cheesy Dip

This roasted garlic cheesy dip on the smoker is out of this world. We're packing it with a blend of creamy cheeses, sweet roasted garlic, and topping it with fresh chives and scallions.

Be sure to serve this dip as an appetizer at your next BBQ backyard get together. Most of the ingredients you probably already have on hand, and it comes together really easily.

WHAT YOU'LL NEED TO MAKE THIS RECIPE

  • Garlic — I'm roasting three garlic heads in the oven until they're nice and caramelized.
  • Cream Cheese — I'm using an 8 ounce block of plain Philadelphia cream cheese as the cream base of the dip. 
  • Mozzarella Cheese — I'm using mozzarella for a nice melty layer. 
  • Sharp Cheddar Cheese — I love using sharp cheddar is most of my cheese-based dips.
  • Green Onions & Scallions — I'm topping the dip with these two fresh herbs to add a little color and brightness to the dip. 
  • BBQ Rub — A smoky and savory twist to tie it all together. I'm using Sweet Preacher by Fire & Smoke Society.

HOW TO MAKE ROASTED GARLIC

1. Roast the Garlic

Cut the tops off the garlic heads to expose the cloves. Place on a sheet of aluminum foil, drizzle with olive oil, and sprinkle some of that BBQ rub on tap. Wrap tightly and roast in the oven for 1 hour at 375F until the garlic is soft and caramelized.

2. Make the Cheesy Base

Combine the softened cream cheese, mayonnaise, half of the. mozzarella, cheddar cheese and BBQ rub in a large bowl. Then squeeze the roasted garlic into the mixture and mix everything until its well-combined.

3. Assemble the Dip

Spread the mixture into a cast-iron skillet or aluminum baking dish.
Then sprinkle the remaining ½ cup of mozzarella cheese evenly on top.

4. Smoke the Dip

Add the dip to your smoker and smoke at 250F for 45 minutes to an hour, until the top is nice and bubbly and golden brown. I used apple pellets for this cook.

5. Serve & Enjoy

Remove the dip from your smoker, let it cool for five minutes, top with those scallions and fresh chives, and serve with pita chips or veggies.

PRO TIPS FOR MAKING THIS RECIPE

  • Cheese Variations. You can make this dip with pretty much any cheese combination, though I do like the cream cheese for the extra creaminess. Feel free to substitute with parmesan or Gruyère for a different flavor.
  • Make Ahead. You can make the base a day ahead, and just pop it into your smoker the day-of to make things super simple.

Ingredients  

  • 3 garlic heads 1 block
  • 2 tbsp olive oil
  • 8 oz cream cheese
  • 1/2 cup mayonnaise
  • 1.5 cups shredded mozzarella cheese divided
  • 1/2 cup sharp cheddar cheese shredded
  • 1 tbsp BBQ rub
  • 1/3 cup chopped green onions
  • 1/3 cup chopped chives

Instructions

  • Roast garlic in oven at 375°F for 1 hour with olive oil and BBQ rub.
  • Mix cream cheese, mayonnaise, 1 cup mozzarella, and cheddar in a bowl.
  • Mash in roasted garlic and stir inBBQ rub.
  • Spread mixture in skillet, top with mozzarella, and smoke at 250°F for 45 minutes to an hour.
  • Remove from smoker, drizzle additional hot honey, and serve with chips or veggies.
