These grilled lamb burgers are just as good as any smash burger you've *ever* had. Haven't tried lamb burgers before? You're missing out? They're juicy, flavorful, and taste great with a thick slice of feta cheese and some dill sauce. 

You know what else I love about these burgers? Just five ingredients, and the whole recipe comes together in about 10 minutes. Yeah, this is an easy weeknight grilling meal. Let's make 'em. 

WHAT YOU'LL NEED TO MAKE THIS RECIPE

  • Ground lamb — I picked up a pound of Atkins Ranch ground lamb at Whole Foods. One pound will make 4 burgers. 
  • Burger buns — Whenever my family is having burgers, we're almost always using Martin's Potato Rolls, the squishiest and best buns around. But you can use whatever you have on hand.
  • Feta cheese — Personally, I can't have a lamb burger without a thick slice of feta cheese right on top. Lamb + feta go insanely great together.
  • Dill sauce — My wife picked up a container of dill sauce at Citarella. It's a mayo-based sauce with dill, scallion, parsley, and dijon and goes amazing on lamb.
  • Sriracha — For a little bit of heat to bring all the flavors together.  
  • Salt & Pepper — To season the meat.

1. Prep the Meat

LAMB BURGERS

Take the ground lamb and form them into 4 ounce burger patties, like the above, about 1/2 inch thick.

2. Grill the Burgers

Toss the burgers on your griddle or grill, and immediately season them with a little salt & pepper. You're going to grill the burgers on each side for about 4 minutes. I like my lamb burgers cooked to medium-rare/medium, so I try to pull them off when the hit an internal temperature of 135F.

3. Assemble the Burgers

Now it's as easy as just putting everything together. Put your burger bun down first (toasted or un-toasted, up to you). Then spoon on a little bit of that dill sauce on the bottom bun. Next, add your lamb burger on top of the dill sauce. Then, take a thick slice of feta cheese and add that on top of the lamb. Next, add a little squirt of the sriracha sauce on top of the feta. Finally, top with the top burger bun and enjoy.

PRO TIPS FOR MAKING THIS RECIPE

  • Customize the toppings. I like to keep my toppings simple because I want the lamb flavor to shine through. But feel free to add sliced red onion or arugula as well.
  • Homemade dill sauce. Can't find dill sauce in the store? You can whip it up quickly by combining mayo, chopped dill, and lemon juice with a pinch of salt.

Ingredients  

  • 1 lb ground lamb
  • 4 burger buns
  • 4 slices feta cheese thick-cut
  • 1/4 cup dill sauce
  • 2 tbsp Sriracha
  • salt & pepper to taste

Instructions

  • Form lamb into four, 4-ounce patties.
  • Grill lamb over medium-heat for 4-5 minutes per side, or cooked until your desired temperature.
  • Assemble burgers with dill sauce, lamb patties, feta, and Sriracha.

Notes
