Garlic Parmesan Wings in the Pizza Oven

These garlic parmesan wings are so good. We're crisping up the wings in the pizza oven and finishing them up with a delicious, easy garlic parm sauce.

The key to this recipe is cooking these wings in the blazing hot temperature of the pizza oven. This cooks the wings fast to achieve a crispy outside while keeping the meat moist and tender inside. 

WHAT YOU'LL NEED TO MAKE THIS RECIPE

For the Wings

  • Chicken Wings — I picked up a package of Bell & Evans cut wings
  • Seasonings — I seasoned my wings with Kindred's "The Blend" which is salt, pepper, and garlic powder
  • Baking Powder — I mixed the Kindred's seasoning with just a bit of baking powder to help crisp up the wings
  • Avocado Oil — to help crisp up the wings and let the seasoning adhere
  • Parsley — to garnish the wings after they've been sauced

For the Garlic Parmesan Sauce

  • Butter – I used Kerry Gold non-salted butter to make up the base of the garlic parm sauce
  • Parmesan Cheese — you want to freshly grate your parmesan cheese for the best texture and flavor
  • Seasonings — garlic powder and onion powder to help season the sauce

1. Prep the Wings

Remove the wings from the packaging and pat dry with paper towels. In a small bowl, combine the salt, pepper, and garlic seasoning with a touch of baking powder, and stir. Apply a little bit of avocado oil to the wings, and season liberally. Add the wings to a wire rack over a baking sheet.

2. Cook the Wings in the Oven

Preheat your pizza oven. I used both charcoal and a few wood chunks in my Ooni. Let the oven get nice and hot—mine was at 600F when I put the wings in. Place the baking sheet in the oven and let the wings cook for 20-25 minutes, flipping the wings halfway through. Aim for an internal temperature of 185F for the wings.

3. Make the Garlic Parmesan Sauce

Melt the butter in a bowl, and then add the parmesan cheese, and stir well until it's smooth and creamy. Then mix in the garlic powder and onion powder until everything is well-combined.

4. Toss & Coat

Remove the wings from the pizza oven and immediately transfer them to a large mixing bowl. Pour the garlic Parmesan sauce over the wings and toss until everything is nice and evenly coated.

5. Serve & Enjoy

Arrange the wings on a platter and top with fresh parsley. Serve and enjoy.

PRO TIPS FOR MAKING THIS RECIPE

  • Make sure your oven is ripping hot. Be patient and let your oven get up to temperature. It took about 30 minutes for my Ooni to get up to 600F.
  • Rotate your wings. The back of your oven will be much hotter than the front. Rotate the baking sheet in the oven every five minutes to make sure all 4 sides of the pan are getting even distribution near the back of the oven.
  • Hand-grate the parm. Don't buy pre-grated parmesan cheese. It contains anti-caking agents that don't allow the cheese to melt as well. Freshly grated tastes better anyway.

Ingredients  

For the Wings

  • 2 lbs chicken wings
  • 2 tbsp avocado oil
  • 1 tsp Kinder's "The Blend" seasoning substitute with salt, pepper, and garlic powder
  • 1/2 tsp baking powder
  • 1 tbsp fresh parsley chopped, to garnish

For the Garlic Parmesan Sauce

  • 1/2 cup unsalted butter melted
  • 1/2 cup parmesan cheese freshly grated
  • 1 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

  • Pat chicken wings dry and toss with avocado oil, Kinder’s seasoning, and baking powder.
  • Arrange the wings on a wire rack over a baking tray.
  • Preheat pizza oven to 550F–600F and cook wings for 20 minutes, flipping halfway through.
  • In a bowl, whisk melted butter, Parmesan cheese, garlic powder, granulated onion, and black pepper.
  • Toss cooked wings in the garlic Parmesan sauce until evenly coated.
  • Garnish with parsley and serve immediately.
