Ingredients
- 1 New York Strip steak cut into pieces
- 1 tsp Worcestershire sauce binder
- 1 tbsp steak seasoning
For the Cowboy Butter
- 4 tbsp butter melted
- 1 tbsp Dijon mustard
- 1 tsp garlic paste
- 1 tbsp lemon juice
- 1 tbsp chives chopped; for garnish
Instructions
- Season the steak bites with the Worcestershire sauce and steak seasoning, then cut the steak into even bite-sized cubes.
- In a bowl, mix melted butter, Dijon mustard, garlic paste, lemon juice, and crushed red pepper flakes to create cowboy butter.
- Heat a grill or flattop to high heat. Sear steak bites for 2 minutes per side until they have a nice crust.
- Transfer to a plate and drizzle with cowboy butter. Garnish with chopped chives and serve immediately.
Notes
- Use high heat. This steak needs to be cooked hot and fast. Crank your grill all the way up. Sear for a minute or two on each site. We want a nice sear without overcooking the inside.
- Steak choices. I used New York Strip, but you can also use sirloin, ribeye, or filet mignon.
