Ingredients
- 2 pieces chicken breasts smoked
- 3/4 cup mayo
- 1/2 cup celery
- 1/2 cup red onion
- 1/2 cup dried cranberries
- 1/2 cup almonds slivers
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Take your smoked chicken, and give it a good dice.
- In a large bowl, combine and stir the smoked chicken, mayo, celery, onion, cranberries, almonds, and salt & pepper.
- Fire up your smoker to 225F degrees. We're using mesquite pellets for this cook, but use whatever you have.
- Put it in the fridge and let it sit for 30 minutes for the ingredients to meld together.
- Serve the chicken salad on its own in a bowl, or on toasty sandwich bread. ENJOY!
