Ingredients
- 2 lbs chicken wings
- 2 tbsp mayonnaise
- 3 tbsp lemon pepper seasoning 1 tbsp reserved for sauce
- 4 tbsp butter melted
Instructions
- Coat wings with mayonnaise and sprinkle lemon pepper seasoning evenly over all sides.
- Arrange wings on smoker rack and smoke at 225F for 1.5 to 2 hours, or until internal temperature reaches 175F.
- Increase smoker temp to 400F and smoke 10 minutes to get crispier skin.
- Melt butter and mix in additional lemon pepper seasoning to create a sauce.
- Toss smoked wings in butter sauce until well-coated. Serve immediately with blue cheese or ranch.
Notes
- Crisp up the skin. Nobody likes rubbery skin on a wing. You can crisp them up by cranking the heat to 400F on your smoker for the final 10 minutes of the cook. Or use a sear gun and blast them with the flame for a few minutes each side.
- Use cooking spray instead of mayo. If you don't like the idea of using mayo as a binder (even though it's delicious), you can skip it and use a little cooking spray instead. The idea is just to get the lemon pepper seasoning to adhere to the wings really well.
