doritos wings

Ingredients

  • 2 lbs chicken wings
  • 2 cups buttermilk
  • 4 cups Nacho Cheese Doritos finely crushed
  • 2 tbsp Buffalo Ranch seasoning
  • 2 eggs
  • olive oil cooking spray for misting

Instructions

  • In a large bowl, submerge the chicken wings in buttermilk. Cover and refrigerate for at least 2 hours or overnight.
  • Crush Nacho Cheese Doritos into fine crumbs using a food processor or a Ziploc bag. Mix in the Buffalo Ranch seasoning.
  • Whisk the eggs in a separate bowl.
  • Remove wings from marinade, let excess drip off, and coat in beaten eggs.
  • Press wings into Doritos-Buffalo Ranch mixture. For extra crunch, double-dip in egg and crumbs.
  • Preheat smoker to 250°F. Use apple or cherry wood for smoke flavor.
  • Arrange wings on the smoker rack and mist with cooking spray. Smoke for 1.5 to 2 hours, until wings reach 175°F
  • Serve hot with your favorite dipping sauces.

Notes

  • Blue cheese or Ranch is a MUST. These wings won't taste amazing without dipping them in blue cheese or Ranch (or both). The Doritos crust by its nature is a little "dry" so these wings *need* a dipping sauce.
  • Smash the Doritos. Make sure you smash the Doritos into a pulp before dipping the wings into them. I put mine in a Ziploc bag and smashed them up with a kitchen mallet. The finer the Doritos are, the better they'll stick to your wings.
