Ingredients
- 1 NY Strip Steak cut into 1-inch pieces
- 8 oz Velveeta Cheese cubed
- 4 oz cream cheese cubed
- 4 oz Monterey Jack cheese shredded
- 1/2 can diced green chiles
- 1/2 can Rotel tomatoes with green chiles drained
- 1/4 yellow onion finely chopped
- 1/2 cup half & half
- 1 tbsp steak seasoning
Instructions
- Combine Velveeta, cream cheese, Monterey Jack, green chiles, Rotel, and half-and-half in a foil pan.
- Smoke at 250°F for 30-45 minutes, stirring every 10-15 minutes.
- Season and sear the diced steak; sauté onions alongside.
- Stir steak and onions into queso, letting it warm for 10 minutes.
- Serve hot with chips or bread.
Notes
- Adjust the Spice. Want more heat? Add extra diced jalapeños or a splash of hot sauce.
- Substitute Cheeses. Swap Monterey Jack for pepper jack if you like a spicier kick, or mild cheddar for a more subtle flavor.
- Make It Ahead. Smoke the queso base in advance and reheat it before serving.
